Banana Muffins/Bread (Gluten Free/ Dairy Free/ Refined Sugar Free)

I completely enjoy a nice warm, moist banana muffin with a nice cup of tea…

What kind of muffin do you enjoy with a cup of coffee or tea?

Banana Muffins

Banana Muffins/Bread (Gluten Free/ Dairy Free/ Refined Sugar Free)

3 mashed medium sized bananas                             

1/4 c.  coconut oil( dairy free margarine)               

1/2 c. palm sugar (or desired granular sugar)           

3 eggs                                                                                    

1 tsp. vanilla                                                                         

1 1/4 c. gluten free flour mix

3/4 tsp. xanthan gum

1 tsp. baking powder

1 tsp. baking soda

pinch of salt

Preheat oven to 350 degrees for loaf or 400 degrees for muffins

In one bowl mix wet ingredients; in another bowl mix dry. Add wet to dry and stir until just moistened. Pour into greased loaf pan of muffin tins.

 Done when toothpick or cake tester comes out clean.

 Bake:  50-60 minutes for loaf- makes one loaf

           15-17 mins. for muffins- makes 12 muffins

           11-13 mins for mini muffins

  2. The flour I used doesn’t call for the xanthum gum, in fact I’ve never used it. I only cook occasionally gluten-free because my SIL has celiac. Does the food have a better taste if you use the flours that require it?

    • Gluten is the glue that holds flour/baked goods together and keeps them from crumbling. Xanthan gum replaces gluten in the way that it keeps the baked goods from crumbling. If you are using a pre-made gluten free flour mix, it may already contain xanthan gum. Some people don’t use it. All I can say is that my baked goods end up being similar in texture to regular baked goods.
